Dragon Sap by Microbrasserie Labrosse offers a punchy aroma and solid hop presence, but falls short on balance. Pronounced bitterness and minerality overshadow the style’s expected softness, resulting in a sharper profile and modest drinkability. With some refinement, its strengths could shine more clearly.

Sanctuaire | Microbrasserie Le Castor
Overall, Sanctuaire lands at the upper end of average beer. It’s drinkable and has some pleasant layers to it. I imagine some people might even like this a lot.
Imperial Stout | Wills
One of the sweetest imperial stouts in my memory and it’s adjunct-free… now that’s quite something. I’d reckon it’s oversweet for all; even for the drinkers with a sweet tooth. Not recommended.
No. 13 Tennessee | Microbrasserie Pit Caribou
I’m sad to report, but oxidation has gotten the best of this beer. I picked up the bottle from a store shelf; where it likely spent months considering the level of oxidation for such a hefty brew. I’ve had imperial stouts after two to three years which demonstrate the same level of aging.
Thomas | 5e Baron Microbrasserie
Thomas is a decent beer with lot’s of character and an interesting personality. There’s a lack of harmony between the ingredients and mild off-notes diminish the drinking experience. With small tweaks this could be a really good beer. There’s no question I’d pick up Unibroue’s Fin du Monde or Don Dieu over this.

I really want to like this, but at this price point I want an exceptional beer and unfortunately Evolution D.T.C doesn’t fit that bill. Maybe this is all due to a month in can… maybe not.

I’m very surprised how flat this beer falls. It’s hard to say what happened here, but it seems like the beer simply didn’t stand up against age. It’s worth noting that typically I wouldn’t write about a hoppy beer after a month from canning but I thought this time could be different.
